Oc gao (small edible snails), a species of mollusk found in Tien Giang, Dong Thap and Ben Tre provinces, is a popular specialty in the Mekong Delta, especially when cooked with Chinese medicinal herbs.

Oc gao (small edible snails), a species of mollusk found in Tien Giang, Dong Thap and Ben Tre provinces, is a popular specialty in the Mekong Delta, especially when cooked with Chinese medicinal herbs.

To prepare you should choose fresh snails and soak them with rice-water or water mixed with a little hot pepper to make them spit out all dirt mud inside.

Then you put the snails into an earthen pot along with some water mixed with a little salt and a moderate volume of traditional Chinese medicines. These herbs comprise of dried dates, Fructus Lycii, Codonopsis pilosula, Yam, bulbs of Rehmannia Glutinosa Gaertn Libosch and dried longan.

After cooking the dish for half an hour, you can enjoy snail meat with lemon juices and salt and pepper or a combination of fish sauce and lemon grass. The sweet soup of the dish is very delicious and good for your health.
